LALVIN ICV OKAY yeast is suitable for young, fresh and aromatic rosé and white wines. The selection target was to reduce SO2 formation and S-containing off-flavors. The selection work was carried out by Lallemand and the Institut Coopératif du Vin (ICV). An additional benefit of LALVIN ICV OKAY is very low acetaldehyde and volatile acidity.
